Ingredients
Here’s what you’ll need to make this flavorful beef stew (serves 4–6):
2 tablespoons vegetable oil
500g beef chuck, cut into chunks
1 onion, sliced
3 cloves garlic, minced
1-inch piece of ginger, sliced
2 tablespoons dark soy sauce
1 tablespoon oyster sauce
1/4 cup Chinese cooking wine (or dry sherry)
3 cups beef stock
2 star anise
1 cinnamon stick
2 carrots, cut into chunks
2 potatoes, peeled and cut into chunks
1 teaspoon sugar
Green onions and coriander, for garnish
Step-by-Step Instructions
Heat the vegetable oil in a large pot over medium-high heat. Add the beef chunks and brown them on all sides. Remove and set aside.
In the same pot, add the onion, garlic, and ginger. Sauté for 2–3 minutes until fragrant.
Stir in the soy sauce, oyster sauce, and cooking wine. Let it bubble for a minute, then pour in the beef stock.
Toss in the star anise, cinnamon stick and sugar, then return the beef to the pot. Bring everything to a boil, then lower the heat, cover, and simmer for 1.5 hours, stirring occasionally.
After 1.5 hours, add the carrots and potatoes. Simmer uncovered for another 30 minutes or until the beef and vegetables are tender.
Serve and Garnish: Ladle the stew into bowls, sprinkle with chopped green onions and coriander, and serve with steamed rice or crusty bread.
