Ingredients
Here’s what you’ll need to make this easy chicken cacciatore (serves 4):
2 tablespoons olive oil
4 skinless chicken thighs (or chicken breasts if preferred)
1 onion, chopped
2 cloves garlic, minced
1 red capsicum, sliced
1 cup of mushroom, sliced
1 cup of olives
1 can (400g) crushed tomatoes
1/2 cup dry red wine (optional but adds depth of flavor)
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Fresh parsley for garnish
Pasta, rice, mash or bread for serving
Step-by-Step Instructions
Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then brown it on both sides for about 5-7 minutes. Remove the chicken from the pan and set aside.
In the same pan, add the chopped onion, garlic, mushroom, and capsicum. Sauté for about 3-4 minutes until softened.
Pour in the crushed tomatoes and red wine (if using), then stir in the oregano, basil, salt, and pepper. Bring the sauce to a simmer and return the chicken to the pan.
Cover the pan, reduce the heat to low, and let everything simmer for 30 minutes, until the chicken is fully cooked and tender. Stir occasionally and spoon some sauce over the chicken to keep it moist.
Add olives and simmer for another 15mins.
Once the chicken is cooked through, remove from heat and sprinkle with fresh parsley. Serve with pasta, rice, mash or crusty bread to soak up all that delicious sauce!
